White Zucchini Boats

4 Medium Zucchinis
1/3 lbs. Hot Sausage, browned*
2 Medium Chicken Breasts, browned & chopped
1 15oz. jar Alfredo Sauce
1 small onion or 5-6 green onions chopped
1 clove Garlic, minced
1 c Mushrooms, chopped
1 tsp. Basil
1 c White Cheese, shredded
Small/fine Bread Crumbs
                                                                                                  
White Zucchini Boats

Preheat oven to 375°F. Cut stem end off zucchini and cut zucchini in half lengthwise. Scoop out & set aside seeds and pulp leaving about a 1/4 inch of shell making the 'boat'.

Brown chicken and sausage in separate skillets and set aside in napkin-lined bowls to remove extra grease.

While meat is browning, chop the veggies individually- don't forget to do the zucchini pulp too- and set aside for later. Chop chicken & put it back in it's skillet along with onion, garlic & basil.

Cook mixture until onions are about halfway done and are looking cloudy/ milky instead of white. Add chopped zucchini pulp and sausage then heat through. Then add mushrooms and alfredo sauce to mix and heat through & remove from heat.

Place the Zucchini boats on a shallow baking pan so they won't rock when you move the tray.
Spread a thin layer of bread crumbs over the bottom of the boat to suck up extra juices as they bake.

Spoon all of the meat mixture generously into the boats. You can also sprinkle parmesan cheese over the tops of the boats to keep the boats from being too juicy.

Bake boats 30-40 minutes or until Zucchini boat is tender.
Remove from oven and top with your choice of white cheeses. Let cheese melt then serve and enjoy!



* You can make your own hot sausage by covering regular sausage with the hot sauce of your choice- you can make it as spicy as you like!
